By popular demand, we're sharing our clean, whole-food, delicious chocolate mousse recipe with you! Courtesy of Sherry Petrulis.
Ingredients:
4 Oz Organic Semi-Sweet Chocolate Chips
1 TB Organic Virgin Coconut Oil
2 Ripe Avocados
2 TB Cocoa/Cacao Powder (raw, unsweetened)
1/4 Cup Honey, Agave Syrup or Maple Syrup (organic, raw, unfiltered)
2 TSP Vanilla
Pinch of Pink Himalayan Sea Salt
1/4 Cup Natural Creamy Peanut Butter (optional)
Fresh raspberries (garnish)
Directions:
Step 1: In a double-boiler, melt the semi-sweet chocolate chips with the coconut oil until smooth.
Step 2: In a separate bowl, mash the avocados with a fork and whisk until smooth, then combine with the melted chocolate/coconut oil mixture.
Step 3: Add remaining ingredients (honey, salt, vanilla, cocoa powder).
Step 4: Use a food processor on low to combine all ingredients.
Step 5: Use a spatula to force the mousse through a fine mesh strainer to get any last lumps out.
Step 6: Fold in 1/4 cup of the peanut butter AFTER all of the above is mixed together (optional).
Step 7: Garnish with fresh raspberries.
