#AVOLovers Alert: Avocado Toast with Herbs, Tomatoes and Feta
Avocado Toast isn't new, but it's definitely not going anywhere! Why? Because it's delicious, whole food-based, packed with nutrients and satisfying for any meal. We're sharing our favorite way to prepare it here. It's awesome paired with a couple of soft-boiled or poached organic, cage-free eggs. Warning: You may be eating this for every meal after you taste it!
2 Slices Sprouted Bread (We like Ezekiel 4:9 Brand Breads)
1 Large Organic Avocado, halved and seeded
6 Organic Cherry Tomatoes, sliced
1/4 Cup Organic, Full-Fat Feta Cheese or Soft Goat Cheese, crumbled
Juice of 1/4 Organic Lemon
Fresh Herbs, coarsely chopped: We suggest Cilantro, Dill, Mint (but use whatever you have on hand or are craving to taste)
1-2 Tablespoons Organic Butter, softened
Coarse Sea Salt (We prefer Celtic Grey or Pink Himalayan)
Fresh Ground Black Pepper
Mash avocado and lemon juice in a bowl until just slightly chunky.
Toast sprouted bread. Spread butter evenly on both slices.
Spread avocado mixture on buttered bread.
Sprinkle with a generous helping of sea salt and black pepper to taste.
Layer feta / soft goat cheese on top of avocado mixture.
Spread tomato slices on top of the avocado / cheese.
Top with chopped, fresh herbs
Slice into triangles (optional)
Serve with soft-boiled/poached eggs (optional)
